Sunday Brunch

This one of my favorite healthy brunch recipes. It’s quick, easy and tasty.
Ingredients 
1/2 cup quinoa
1 tomato
2 eggs
basil
salt & pepper
Serves 2
Directions:
Start by cooking your quinoa. While the quinoa is cooking poach your eggs  (how to poach and egg). Dice your tomato and chop the basil.
Assemble  with the quinoa on the bottom and the tomato and basil on top. Top with your poached egg and season. Serve and enjoy.
