Brunch ~ Poached Nectarines
Summer brings with it an over abundance of fresh fruit. I love this poaching recipe because it’s simple, delicious, and can also be used with peaches, pears and apricots.
Grab some fresh nectarines from you local farmer’s market or in my case it was Trader Joe’s.
Make your poaching liquid by mixing a sweet white wine, like Riesling, with equal parts water, a dash of vanilla extract, and a good amount of brown sugar. I pretty much eyeball the ingredients until the liquid tastes sweet enough for my liking.
Slice the nectarines and arrange in an oven safe dish. Pour the poaching liquid over the fruit. Cook in the oven at 350F for about 30 minutes or until the fruit is soft and tender.
Tip: Once the ramekin is on the oven rack use a spoon to rearrange the slices so everything is submerged in the liquid.
Serve with Greek yogurt, vanilla ice cream, or whipped cream.
